These combos are simple and easy to whip up for the week. In the photo, I’m using my silicone, reusable, dishwasher safe to marinade the chicken to help cut down on my use of plastic for the environment and for me! ⠀
⭐️What to do:
1. Combine ingredients in a bowl.
2. Place chicken and marinade a bag.
3. Marinade in fridge for 2 hours.
4. Bake for 25 min 450 degrees for a 7oz breast

Below are the marinades. Each makes 1 serving, multiply for each chicken breast you have.

🍋Cilantro lime:
1 tbsp olive oil
1 lime
1 tsp honey
1/4 cup cilantro leaves chopped

Instead of thinking of fast food as a convenient or good alternative when we’re in a pinch, think about how much time you’ll save if you stock your fridge up once or twice a week. In fact, you can even order food and produce online if don’t want to drive to the store.

And really when you think about it, getting in your car, driving to the nearest fast food place, sitting in line and waiting is longer than grabbing some fresh veggies and fruits for the fridge!

Need some more filling options? A medium boiled egg only takes 4 minutes and if you boil a bunch at the beginning of the week you’re freaking set! (I’m obsessed with my egg cooker from amazon - life saver)

ROASTED BUTTERNUT SQUASH & CARROTS | Orange food! So good for you because of all the beta-carotene that is packed into bright coloured foods! Foods high in this pigment include carrots, squash, sweet potatoes, spinach and kale. And why exactly is beta-carotene good for you? Well (as part of a well-balanced diet) it’s great for maintaining good skin health - it’s an antioxidant that helps to protect us against free radicals, which can be harmful to the skin and there’s evidence to suggest that beta-carotene is helpful in maintaining good eye health. So here’s a recipe to help you get more beta-carotene in your diet! .
Ingredients:
.
1 butternut squash, peeled, deseeded and cut into small chunks
2 carrots, peeled & chopped
I red onion, peeled & sliced
1 tsp paprika
1 tsp ground cumin
1/2 tsp ground cinnamon
1/2 tsp chilli flakes
Olive oil .
Method .
1️⃣ Pre-heat the oven to gas mark 6, 400F/200C. Place the carrot, squash and red onion on a large baking tray lined with foil.
2️⃣ Drizzle a large glug of olive oil right across the veg, sprinkle on all the spices and then mix everything together with your hands
3️⃣ Place in the oven for 35-40 mins until the veg is cooked and soft.
4️⃣ Serve either as a side dish or add to a salad.

Brown rice cooked with homemade chicken broth, roasted sweet potatoes and peppers, sautéed spinach with sesame seeds and a touch of soy sauce, baked heirloom tomatoes, fried eggs, hand-crushed flax seed and a peanut, lime, chili sesame oil drizzle. Feel good, eat good. ♥️💪🏽🎙
