’Chick’n’ (tofu) tenders and fries 😍🍟🌱 📄 Recipe: 🌱Slice 1-14oz packet extra-firm tofu into approximately 1/2-to 3/4- inch thick rectangles. 🌱Freeze on plate or baking sheet overnight. (You can freeze as is in original packaging but it takes longer and it's not as effective.) Thaw at room temperature before gently pressing to remove excess liquid. 🌱Mix: 1/2 cup all-purpose flour, 3 tbsp nutritional yeast, 1 tsp Cajun seasoning (or your favorite seasonings...ex. garlic powder, chili powder, cayenne, paprika), 1 tsp salt, 1/2 tsp black pepper. 🌱Cut tofu rectangles into 1/2-inch wide sticks. Roll tofu in flour mixture twice to get sufficient coating. Heat neutral oil to frying pan. (Should be enough oil to reach half way up the sides of tofu sticks.) Pan fry tofu in hot oil until crispy on each side. (Served with sriracha ketchup)

Chicken Salad with all the flavors of a bacon lettuce tomato and avocado sandwich, without the heavy bread! This chicken salad is so flavorful and so hearty, and even carb lovers will love this lettuce wrap recipe!

1/2 cup plain fat free Greek yogurt
1/4 cup mayonnaise (I used full fat for richer flavor)
2 tsp fresh lemon juice
2 tbsp thinly sliced green onions
1 Tbsp minced parsley
Salt and freshly ground black pepper
3 cups diced cooked and chilled chicken breast
6 slices bacon , cooked and chopped
1 1/2 cups grape tomatoes , halved
1/2 cup diced celery*
1 medium avocado (fairly firm but ripe), diced
Romaine lettuce leaves , for serving
In a medium mixing bowl stir together Greek yogurt, mayonnaise, lemon juice, green onions, parsley while seasoning with salt and pepper to taste.
Add chicken, bacon, tomatoes and celery to a large mixing bowl (if you want some of the ingredients to show through set some aside to sprinkle over the top of the salad before serving). Add in the dressing mixture and toss to coat. Gently toss in avocado. Serve over lettuce leaves (or in bread slices).
*I didn't add celery the first time I made it which is why it isn't pictured but the second time I decided to try it and I like it much better with the celery. I like the crunch it adds.

The weekend. A great time for socializing and for many of us, drinking alcohol. How do I incorporate alcohol in my healthy lifestyle?⠀⠀⠀⠀⠀⠀⠀⠀⠀

BALANCE! When I’m out, I’ll have a few drinks if I’m in the mood. I’m not binge drinking like a college student! I make sure to also drink plenty of water to keep me hydrated. Another thing I do is avoid the super sugary drinks because they always make me feel terrible! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Having only a few drinks instead of many helps me curb the late night munchies which while always delicious, usually isn’t necessary and doesn’t help me achieve my goals. Having those nights every once in a while isn’t a big deal (trust me, it happens 💁‍♀️🍻🍕), but if I’m doing it every weekend and not seeing results, odds are that the drinking habits are greatly contributing to my lack of progress.
Finding my balance didn’t happen overnight. Balance sounds like a really obvious answer, but when you’re going through it, it may not be so clear. My initial weight loss happened when I was in college. I went to @iubloomington and drinking is prevalent. It was hard for me to figure out how to be social but maintain my weight loss. It took time!⠀⠀⠀⠀⠀⠀⠀⠀⠀

Kto by pomyślał, że zamiast jak zawsze w długi letni weekend zajadać się lodami czy goframi gdzieś będziemy je serwować u Nas ☺️.
Prowadzimy Amorino prawie 4 miesiące, a ja mam wrażenie jakbym siedziała w tym co najmniej rok 🙊.
Nie wiem jak daleko mnie zaprowadzi ta odważna decyzja, ale wiem, że mimo wszystko warto sięgać po swoje marzenia i stawiać pierwsze kroki ❤️. Wszyscy, którzy mają własną działalność zadają mi retoryczne pytanie - czy prowadząc firmę mam tak naprawdę mniej czasu wolnego niż miałam na etacie?
Niestety tak i każdy kto przechodził tę zmianę to wie, ale wierzę, że nie zawsze tak będzie. A to co robię tutaj nie zawsze odczuwam jako pracę, bo niekażdy dzień jest tak intensywny jak ten. Najbardziej lubię jednak samodzielność i niezależność w prowadzeniu biznesu, chociaż oczywiście mam też dużo zobowiązań i poczucie odpowiedzialności.

Tofu Katsu bowl, anyone?😋 Tag a friend who loves crispy food.

📄 Recipe (2 servings)
Ingredients:
🌱 1 pack of firm tofu, drained
🌱 2 slices of vegan cheese (used @followyourheart )
🌱 oil for frying, salt & black pepper to taste
Batter: 🌱 1/3 cup rice flour/all purpose flour
🌱 1/3 cup chickpea water
🌱 panko crumbs
Tonkatsu sauce (inspired by @food52 🙏🏻 ): Whisk together 1 tablespoon ketchup, 3 teaspoons vegan Worcestershire sauce, 1 teaspoon soy sauce/stir fry sauce (optional or season with salt), 1.5 teaspoons maple syrup, and 1 teaspoon mirin (optional) in a bowl, set aside.

Sides:
Cooked grain, sliced cucumbers with sesame seeds, shredded purple and white cabbage in homemade 🥕 ginger dressing

Set up your batter station, put each ingredient in a separate plate. Add a little water to panko crumbs to make it wet.

Slice tofu horizontally, so you get two blocks, season with salt and black pepper. Then, cut each half again horizontally but don't cut all the way, leaving some space to hold the cheese. Slide 🧀 in between. Do the same for the other half.

Dredge tofu in flour, pat and remove excess, then chickpea water (be sure all sides are coated), then pack all sides in wet panko crumbs. 🍃
I did shallow pan fry, where my oil covers half of the tofu when frying. Fry in medium heat. Tofu Katsu is ready when all sides are golden brown. Place fried tofu on paper towel to absorb the remaining oil. To serve, drizzle tonkatsu sauce over and pair it with the sides above.

Bit of false advertising here. If it were an accurate account of this evening this would just be a picture of me sitting in my pants working my way through five cinnamon and raisin bagels (and three diet cokes). Buuuut this is much more instafriendly and I've got my beacon of health reputation to uphold (lol). This is a top notch plate of ginger and garlic spring greens with lentils and cumin roasted cauliflower, plus roasted sweet potato. Part of me feels a bit sad that I didn't eat this today, but then the vast majority of me doesn't care - I love cinnamon bagels, I love being lazy, and I LOVE not wearing any trousers.

Baked BBQ chicken wings 😍
1 pound chicken wings
1 tbsp extra virgin olive oil
4 tbsp golden BBQ sauce
1/2 tsp garlic powder
1/4 tsp chipotle powder
lots of paprika
1/4 tsp black pepper
pink salt
combine all the ingredients and toss the wings in the mixture.
bake at 425 for 20 minutes flipping hallways through.
paired with pan-seared cauliflower gnocchi (recipe back in my feed), cucumber, tomato, scallions, cilantro and avocado salad (I used olive oil as a dressing) and mushrooms, sautéed in extra virgin olive oil with shallots and garlic.

Not much to show you this evening, but a little nutritionist nugget of wisdom to share; if you ever feel those black clouds gathering, nothing keeps them at bay like blasting Will Young - Evergreen, eating an egg sandwich and ignoring Instagram (egg sandwich optional). I'll never be one to meticulously share each morsel that passes my lips (mostly because life is too short and I've got better things to do), but I do sometimes fall victim to feeling guilty for not consistently over-performing. It can seem like everyone has fantastic jobs as well as wildly successful personal projects. But I'm here to say hi, I'm not doing anything special, and it's ok if you're not either.

Omelet with sauteed mushrooms + spinach + arugula + red bell pepper + onion with sweet potatoes (cooked on medium heat in a pan with avocado oil for 15 min and tossed in paprika) + sauteed grape tomatoes + avocado with EBTB + organic blueberries.
I usually start cooking the sweet potatoes first, then the veggies (minus the greens), and lastly the spinach & arugula due to cooking times of each. This way everything is done at about the same time!

Baked organic chicken breast (Season breasts with kouzinifoods Italian seasoning which is currently out of stock but I’ll update you guys once it’s available!) + dash sea salt. Bake at 350 for 20-25 minutes or until internal temperature reaches 163F. Pair with crispy zucchini rounds and asparagus (season with traderjoes new umami seasoning + pepper and Italian seasoning. Cook on a hot pan for a few), + my fave garlicky mushrooms (recipe few posts back), avocado -+ primalkitchenfoods ranch dressing drizzle 🥰

Currently waiting for my Vitamin See smoothie which has mango, pineapple, freshly squeezed carrot & orange juice and 500mg of vitamin C. This flu and I aren’t sticking together for long, I can’t.

Chickpea-Omelette filled w/Maple Balsamic Garlic Mushrooms & Valerian Salad 😍

📃 Recipe
Ingredients:
For the omelette
🌱50 g chickpea-flour
🌱100 g whiteflour
🌱300 g soy-milk
🌱1/2 tsp baking powder
🌱1/2 tsp salt
For the filling
🌱200 g mushrooms (sliced)
🌱1.5 dl balsamic-vinegar
🌱1 garlic clove (minced)
1 tbsp maple syrup
🌱salt
🌱100 g valerian salad
Method:
1. Heat a saucepan, add in little oil and sauté the mushrooms for 5 minutes.
2. Place vinegar, maple syrup and garlic in a bowl, whisk and pour over the mushrooms. Simmer for 3-4 minutes then place aside.
3. For the omelettes. place all the ingredients in a bowl and whisk until lumps free.
4. Heat a saucepan over medium heat, add in 1 tsp of oil, pour in 2 dl of chickpea-mixture and move the pan around to spread it out evenly.
5. cook for 3-4 minutes then flip the omelette carefully and cook for another minute.
6. Fill the omelettes and serve hot.
