Happy Pancake Sunday 🥞
It's literally been months since I last made pancakes but I had some reaaaally delicious buckwheat pancakes in London two weeks ago that made me want to make pancakes again myself. And since my mom had buckwheat flour sitting in her pantry I made buckwheat ones for the firsr time. Topped with banana, fresh strawberries, crushed walnuts and (lots of) maple syrup. So delicious, and so easy to make! Here's the recipe:
First bowl: 1 cup plant milk mixed with 1 tsp apple cider vinegar, let sit for 5 minutes.
Second bowl: 1 cup buckwheat flour, 1 tsp baking powder, 1/2 tsp baking soda a dash of cinnamon.
Mix dry and wet ingredients together until you have a smooth batter, add more plant milk or water if needed. Add any sweetener you like.
Preheat your pan well then bake pancakes for ~2 minutes on each side.

Bell peppers are a tasty, colorful, & low calorie snack that are also extremely nutritious. Bell peppers are packed with vitamin C, A, water, & antioxidants. They’re also low in calories & a good source of additional vitamins & minerals like vitamins E, B6, K1, potassium & folate.

One common misconception is that the different colored peppers are all the same plant, just at different stages of ripeness. However, that is not true. What I like the most about this pancake recipe is that the batter can be prepared in just 5 minutes or less. Yay!

Ingredients for 8 pancakes:
190g | 1 1/2 cups flour, sifted
30g | 1 1/2 tbsp sugar of choice
1 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1 flax egg
1 cup vegan buttermilk
1 tbsp vegan butter, melted
1 tsp pure vanilla bean paste
Handful (about 120g) fresh blueberries
Vegetable oil for cooking
Maple syrup and extra blueberries to serve.

INSTRUCTIONS
1. In a large bowl, sift together flour, sugar, salt, baking powder and baking soda and whisk to combine.
2. In a separate bowl add buttermilk, vanilla and melted butter.
3. Add the flax egg to the buttermilk and whisk to combine.
4. Pour the wet ingredient mixture into the dry ingredients and stir till mostly incorporated. The batter should be thick and a little lumpy. Gently fold in the blueberries. Set the batter aside for 10-15 minutes.
5. Heat a non-stick pan over a medium heat and lightly grease it with oil. Use a 1/4 cup measure to scoop the batter into the pan.
6. Cook until the first side is golden brown, or until the top surface forms bubbles. Flip and repeat on the other side.

Gently fold in the blueberries. Set the batter aside for 10-15 minutes. 5. Heat a non-stick pan over a medium heat and lightly grease it with oil. Use a 1/4 cup measure to scoop the batter into the pan. 6. Cook until the first side is golden brown, or until the top surface forms bubbles. I have a special relationship with pancakes because they were the first food I ever cooked for myself (at the age of 13). I gained a lot of weight back then because I always made them with wheat flour, milk and sugar - and they were my lunch several times per week. 🤣 but luckily I found out about #cleaneating and have been enjoying my soul food #guiltfree with healthy ingredients since then. 😊
This time I tried teff flour which is gluten-free and very tasty. 👌🏼 However, it’s not as sticky as plain flour so be careful when you flip the pancakes. 😉
RECIPE:
85g teff flour from @govindanatur
15g vanilla protein
1 Tbs ground flaxseed
1 large mashed banana (140g)
1/4 tsp vanilla powder
160g oat milk
1 Tbs lemon juice
1 tsp baking powder
1 Tbs @govindanatur Goviosid
A handful of dark chocolate chips
1. Combine wet ingredients with baking powder and let sit for a few minutes. Then add the remaining ingredients and whisk until well combined.
2. Use more oat milk if necessary ➡️ I like my batter really thick.
3. Fry small pancakes in a non-stick pan (brush out with coconut oil if necessary) on medium heat on both sides until golden brown.

Desert shouldn’t just be a once in a while thing, it should be an everyday thing. And with this healthy banana cake it can! (Disclaimer: As delicious as this cake is, it does taste very whole-meal so it is not for everyone)
Things you’ll need:
1. 3 ripened bananas 🍌(the spottier the better, if you don’t have them ripened just cut the bananas and place the slices in the microwave for a minute)
2. 1 egg 🥚
3. 2 tablespoons of brown sugar
4. 1 teaspoon of vanilla essence
5. 1 and 1/4 cups of whole meal flour (sifted)
6. 1 teaspoon of baking powder
7. 1 teaspoon of baking soda
8. 3 tablespoons of apple 🍏 purée (I used baby food🤣) ...
Steps
1. Mash the bananas, then add the egg and mix well.
2. Add the sugar, and vanilla essence into the mixture.
3. Fold in the dry ingredients (flour, baking powder and soda) into the wet mixture.
4. Add in the apple purée and mix well, just until the ingredients are combined. (don’t over mix)
5. Bake in a loaf tin in an oven preheated to 180 degrees celsius for 30-45 mins or until a toothpick inserted comes out clean. ...
